Make sure xine is not running and edit ~/.xine/config to show:

# device used for 5.1-channel output

audio.output.speaker_arrangement:Surround 5.1

(Yes, I realize two of these are defaults, but if you've set them to 
non-defaults, you want to change them back--by commenting out whatever 
you've put in.)
