Because your output device probably can't take the encrypted stream and
produce usable output.

Even if it could on the same media-PC+cablecard combo it was recorded
on, one of mythtv's strengths is a central store for multiple displays
around the building.

Consider not being able to play back your (paid for) programme on the
silent&diskless media PC in the lounge if your loud cablecard-containing
always-on server machine is in the basement...

Consider having a better sound setup on a different card than the
hypothetical encryption-supporting output device and wanting to use it
instead.  It may entail format conversion, and you can't do that on an
encrypted stream.

Lots of reasons that encryption is bad for ease-of-use for the non-
criminal end-user.
