In MythDVD, in the screen where you rip/transcode a dvd, you can select 
a quality:  Perfect, Excellent, Good, Medium.

Perfect = just rip the disc, don't transcode it
all others = rip + transcode, transcoding parameters (bitrate, etc) 
determined by quality level (Excellent, Good, Medium)
