For my Mini-ITX project I'll be starting soon, I had the same problem...
how to fit a full size capture card in a tiny case...

I went and had a quick look online at the Antec Minuet MATX case you
mention and there might be enough room to go up and over horizontally.
That is if you aren't skittish about modding your case to make a hole(s)
for the inputs :-)
