No, actually, some bioses will really lock up at boot if they don't
find a video card *with a monitor plugged in*.  All of them, of course,
require the adapter, but I have personally fought with ones that
required the monitor, too.  They likely *won't* be unhappy, though, if
they have TV out -- you *can't* detect the lack of a *video* monitor,
just VGA.

I believe the recommended model is the SiS chipset one, right Chris?
