I think it's safe to say picking the video card would be the least of
your problems with a 3 card 3 mythfrontend setup.  It *might* be doable,
although controlling three separate frontends independently on the same
machine would probably be tricky to set up, if it's possible at all.  

I would suggest you look on the net for articles about running
multi-headed XFree86 as a start or search this mailing list. 

Far better to buy/recycle two cheap computers and press them into
service.  I would buy an xbox for the purpose, but there are some hoops
to jump through if you go that route.
