For MP3 encoding (if you've selected CBR in the setup):

Poor = 128 STANDARD CBR (and forces VBR -> false)
Medium = 192 STANDARD CBR (or STANDARD VBR)
Excellent = 256 EXTREME CBR (or EXTREME VBR)

Don't ask me what the 'STANDARD' and 'EXTREME' presets are.

"Perfect" uses the FLAC encoder, which is lossless, or nearly so.

PS- Unless you share your mp3s with other people/devices, I'd consider 
using Ogg instead.  Also, if you have the disk space, FLAC ("Perfect" 
rip) is the way to go.  If you have a FLAC collection, you can always 
transcode tracks to any other format.  This is what I would do, if I 
had the disk space. (As it is, my collection of mp3's & oggs is inching 
towards 40GB).
