That depends, I use a PVR-250 HW encoder which always creates MPEG2 and I 
found out that more than 5MBit/s is not visual from analog TV on a TV-Set. 
That means including some audio you will have ~0.5MByte/s, or 1.8GByte/hour, 
now you can calculate on your own.

You should add 2GByte for the SW, 1GB swap and a few GB for the LIveTV-Buffer.

I have a 160GB HD.
