Sounds to me like you're missing something in the encode process...
Best I can say is watch ps to see if you have the right processes
running (mythtranscode -> yuvdenoise (if you turned it on) -> yuvscaler
-> mpeg2enc), and watch that text output for errors.
btw, your system date is a year slow.
