[mythtv-users] how does transcoding work?

I just installed MythTV 0.9 from the Debian packages
and I was wondering how to get transcoding to work.  I
would like to get some high-quality shows by using
RTJPEG to capture and then transcoding to MPEG4 later.
 I set MaxTranscoders to 1 and then made different
recording profiles for Default and Transcode.

I must be missing something, because after the
recording completed, nothing happened.  I thought that
the transcoding would begin immediately after the
recording was complete.  I even waited overnight, but
when I check this morning, still nothing.  Anybody
care to give a brief explanation of how it works?
