Heh... Fun! But certainly doable. I commence work on a secondary system 
for upstairs this weekend, and I think I've finally committed myself to 
doing it under Debian, but its not an nForce2 board. Then I've got a 
HushPC I'm going to set up w/Gentoo, following Ivor's docs... I love 
four-day weekends!!!

Most of the time, an installer kernel will have only the bare 
essentials enabled, the idea being to keep the memory and disk space 
footprints as small as possible and make it work on the lowest common 
denominator system, so I wouldn't expect any distro's installer kernel 
to have APIC enabled.
