For a beginner, I would recommend RedHat or Fedora Core simply because 
of Jarods excellent install guide.

It is straight forward and should get you up and running.

The 350 has hardward encoding and decoding. The 250 just has encoding. I 
havent used a 350 but I understand it takes more effort to get the 
decoding working. The driver portion for decoding is still young. The 
250 would be fine since you have more than enough CPU to handle the 
decoding on playback.

Following the guide above, you should be able to get it working in an 
evening. However, since it is a computer project plus/minus 3 months.
