When you say "application server" - what sort of applications are you 
talking about?  If any of it is severely disk-intensive, you might end up 
with some dropped frames in your recordings occasionally.

MythTV will most likely not lock up the entire system since it's all 
userspace code, but the ivtv driver for the PVR card is another story.  
This is very alpha/beta level kernel code, and while it works really 
well, there is no way to guarantee that it won't lock your machine.  It 
will probably be some time before this driver is what most people would 
call "stable" or "production".  I will say that it's been very 
reliable for me, and never locked up my machine, but YMMV.
