It's set to Composite 0 because that's what you have it set for.

Set it to use Tuner 0 as the default input for that card in the second step of 
'setup' (ie, Capture Cards), make sure that 'Tuner 0' is assigned to a video 
source in the 4th step of 'setup' (ie, Input Connections), and make sure that 
the 'Starting channel' value for Tuner 0 is set to a channel that you have, 
and that both 'External change channel command' and 'Preset tuner to channel' 
are blank.
