SPIDIF comes across as two encoded channels which are then decoded into 5.1 by the audio processor (usually receiver). I can get 5.1 out of my Westinghouse 32 (piped through either my Sony HT-IS100 or my STR-DA4400ES) as well as a couple of Sony Bravia's here at work through various Sony equipment (sound bar, receivers, etc.)
I'm not positive, but I'm pretty sure I used to run HDMI from my PS3 to my Westinghouse 42", then SPIDIF out to a Pioneer receiver with no issues, either.
