If that's all I get, why would I use this instead of ssh? How would I go about getting graphical access on a different display that doesn't interrupt the mythfrontend use of the machine? Any hints would be appreciated.

Just issue the mythfrontend command at the command prompt and, unlike SSH, that will bring up mythfrontend in your VNC session. Depending on which windows manager is being used (probably twm by default I would guess) you can also add a command to bring up mythfrontend in the window manager's menu. If it's twm have a look at .twmrc.
