Does anyone have any similar experience with this to advise what to
do? I don't think it's heat as I installed a 12cm case fan and the
most recent lock up was at 51 degrees C. I'm wondering whether it
might be a dodgy memory stick, or not enough memory (256MB)?

What was at 51 degrees C? The processor? 256MB is a little cramped, but probably not the cause of your lockups.

System spec is that it's a combo back and frontend. 2.4Ghz Celeron
CPU, 80GB disk, 256MB RAM. Fedora Core 3.

A little more detail here would be helpful. What motherboard? What capture card? What version of the capture drivers? Which kernel?
