Sounds like you have MythTV configured to record with low volume, so 
after you change it (outside of MythTV), when MythTV starts a recording, 
it sets the (low) volume you've configured for it. Setup|TV 
Settings|Recording Profiles|MPEG-2 Encoders, IIRC.
