You can adjust the PVR500 tuner volume with:
v4l2-ctl -d /dev/video? --set-ctrl=volume=**

The question mark should be the number for your PVR500 and you have to
set it on both tuners.
** is a numeric value. The possible values differ for every card and
you have to set it again on every reboot, so you should set a chronjob
to do this.

I have never tried on the composite input, but I guess you can use it
there too by setting it on that video device.
v4l2-ctl has extensive help on the possibilities for every card. Just
type v4l2-ctl and go from there.
