You are correct. That pointed me in the right direction.
Looks like I will be investing in a WinTV-HVR-1265, WinTV-HVR-1150 or WinTV-HVR-1955 soon which states they can record NTSC analog a.k.a channel 3.

I have a feeling that for you to record from the coax out you will need to
connect it to an analog tuner (i.e. /dev/video0) and select channel 3 on
that.
