It depends on how you schedule it. If your recording rule says
"record at any time on any channel", the scheduler will figure it out.
If your rule says "record on this channel", you're telling the
scheduler exactly which channel it must be on. If your digital
channel has a different call sign than your analog channel (WCBS vs
WCBSDT), you're forcing the scheduler to record only analog or only
digital.

Make sure your tuners are numbered from best to worst, set all your
recording rules to "any channel", and let MythTV handle the rest.
> #2: How good is USB at putting the HDPVR data stream on disk? My Myth box probably has only USB 2.0
The HDPVR is also USB 2.0, so you're good there. There's plenty of
bandwidth for video on USB 2.0.
> #3: ir-blasting: Do I blast the HD Box from my MCE receiver and the HDPVR sits as a passive converter? Or signal the HDPVR over USB which will then blast the HD box? Anyone on Shaw using Firewire with the DCX for channel-changing?
You could do this any way that works for you. I change channels with firewire.
> #4: Stability: I've seen the stability problems with the HDPVR, requiring resets. Is there some merit to maybe do this in a cron job proactively?
No. Wait and see if you have problems first. If it appears to be
working properly, don't mess with it.
As far as your specific model of STB, I can't answer your questions.
You're probably best off just trying it out and seeing for yourself.
