Dish (and, I'm fairly certain, Direct TV) do all of their copy
protection at the box level. They output over S-video and component "in
the clear", since that's all you can do on these connections.
I have two Dish receivers and two HD-PVRs connected with component and
TOSLINK cables, and the quality is very good. On the other side, I've
heard complaints from folks whose cable companies compress the video too
much, to the point where quality suffers.
