I've been trying to find a way of replacing that value in the recordings, but haven't been able to find one yet, any suggestions would be welcome.
Doesn’t the HD-PVR have a setting like aspect override or something like that ?

 
I've not found anything like that - would be really good if there was a setting like that
tsMuxeR tsMuxerGUI has this option, remuxing without reencoding. The option is AR for aspect ratio.

I am able to watch the recordings in mythfrontend by setting the Aspect Ratio override, but that's no good when I'm away from home and watching via Plex, so fixing up the recordings would be good.

I did look at tsmuxer, but couldn't get it to work, sadly.
What do you mean by "couldn't get it to work” ?
Mediainfo said the files were the same ?
Or, media info said 16:9 but still were not playing as it should with plex and others ?

When I load the file into tsmuxergui it complains that it is an unsupported format
