If your seeing residual images after deleting the fanart, then you probably
need to clear the frontend image cache in /home/<frontend user>/.mythtv/
Pretty sure you can safely blow away all of the folders that contain the
word "cache" and they will be regenerated.

Editing the theme is pretty easy using override files.  Good luck.
