Grub is the bootloader - it's what puts the menu up on screen with a list of "things to boot". The default is usually to put the list up, wait a few seconds, then boot the default option.

So you need to wait while all the "machine stuff" finishes (that's all the bits of code that runs first initialising raid controllers, trying to boot via PXE, and so on), then you'll see Grub display the menu - at that point if you press any key (even just up or down arrow) it will interrupt the timeout and you get to take your time deciding which option to boot.
