I'd recommend Debian on PPC rather than OSX unless you really want a project.  Its all nicely precompiled.  I have a G5 Mac Pro backend and general server running debian which has been great, though the power consumption probably makes it a silly option.  I'm going to switch to core2 soon to get more disks, but it has been a nice solid server for several years.
