Nonsense. MVS and old school side by side stereo video don't need 
hardcore voodoo magic to be displayed on a 2D display. If you have a 
3840x1080 side-by-side file with proper signaling your 2D player only
has to crop the picture and move on. No greatly reduced quality!
Some standards (not Matroska but e.g. DVB-3DTV) even hint that you may 
specify plain 2D old crop/scale values to crop the picture for one eye 
while having stereo players use the 3D signaling instead.

Of course a 720x576 top/bottom file encoded with some old crap MPEG-2 
encoder to a low bitrate will show artifacts on any screen, but that has 
nothing to do with stereo/mono video.

3D support does have some limitations, but initial support for rendering 
of side-by-side stereo video in 2D has made it 0.25!

Notice that even the "new" StereoMode in Matroska was only new in 2010!


Back to the OP's question, try to switch to "Stereoscopic Mode Top And 
Bottom Discard".

PS: I've not tested 3D support, but patches for missing plumbing are 
appreciated. (The referenced commit hints that not all renderers had 
support for discarding the second picture initially.)
