OK, after more rummaging about I have it:

Frontend > Setup > Video > Recording Priorities >
Set Recording Priorities > Page  1 is Scheduler Options,
followed by Pages 2 and 3.

Wow!!  I hadn't seen all that before.  I think I gave up at Video.
