Weird that you're only getting one line. What distro are you running?
Perhaps the output is going into a log file by default on your distro?

Here's my sample output on Gentoo.

# mythtranscode
2012-03-26 17:05:20.845280 C mythtranscode version: master
[v0.25-beta-158-g9c4e7fd] www.mythtv.org
2012-03-26 17:05:20.845304 N Enabled verbose msgs: general
2012-03-26 17:05:20.845329 N Setting Log Level to LOG_INFO
2012-03-26 17:05:20.845368 I Added logging to the console
2012-03-26 17:05:20.845373 I Added database logging to table logging
2012-03-26 17:05:20.845439 N Setting up SIGHUP handler
....

It might be reading a settings.txt file in your <home>/.mythtv/
directory. There is a --syslog none option, but generally that is
supposed to be the default, however maybe yours isn't.
