Take ext4, and use the filefrag command to check how many extents a file 
is using. An extent is max. 128MB. However, it is very unlikely that you 
will get any noticable improvement by defraging, both XFS and ext4 do an 
excellent job when reading moderatly fragmented files.

I checked it on my system, a FullHD-recording with 10GB of size would 
fit into 80 extents, actually it's using 400 extents. That does not mean 
it's relevant performance-wise.

So, don't expect too much from optimizing the filesystem level.
