I use k3b or brassero to create ISOs
I then use Handbrake to select the appropriate titles on the ISO and
convert to mkv with H264 and pass through for the best sound quality
that is available (5.1 or whatever), plus appropriate subtitles.

In this way the transcoding can go on all day long, and in fact I can
sit at work ripping discs on my laptop occasionally, copying them to
my backend for later transcoding. The transcoding queue can process
24x7 that way.

it can be a pain in the a**e as you do have to select the appropriate
titles, as many studios are trying to obfuscate by introducing 99
titles of similar lengths comprising the chapters in the wrong
order... but open the dvd menus in VLC play each episode to find the
title number and audio channel to use...

You'll see dvds in the same series tend to follow the same layout; but
now I have written that maybe they'll notice and change... damn it!
Like it stops us... from using media we bought in a way that is
convenient for us... who wants a cluttered house with hundreds of DVDs
lying around.
