Just in case someone comes across this later, not exactly sure what
the problem was but it is fixed. I have 2 of the same SSD so I
decided to try everything with the other drive. Setup partitions,
RAID, copied data over, etc. Everything worked fine. Plugged in the
original SSD as /dev/sdb, nothing even happening on that drive, and
got kernel panic during boot. I hooked that drive up via USB, system
booted fine, deleted all the partitions, shutdown, hooked it back up
and plugged it in as sdb, system boots fine. Repartitioned and added
to the raid array, every is great on it. No idea what the issue was,
or why a corrupted partition table on a non-boot drive would cause a
kernel panic, but it appears ok now.
