Responding to myself as I just realized that the PVR-500 card itself
only has the one physical set of S-Video/Composite inputs anyway, so
even if the card does support 2 of the add-on cable-sets, it would
still only be able to use the correct combination of 2-RF inputs
and/or 3 Svideo/Composite inputs anyway.
So, yes, my math was wrong, it should have been:
PVR-500 inputs:
2-RF (1 physical)
3-Svideo (1 built onto card, 2 available via add-on cable sets)
3-Composite (1 built onto card, 2 available via add-on cable sets)

It's all somewhat difficult anyway, as first, I believe those cable
sets are hard to find, and you can still only use a single input at a
time on the 150/250/350 cards, and 2 at a time (2 RF or 1 RF and 1 S/C
or 2 S/C) on the 500's.

In the end, still useful cards for some situations even if not using
the RF/NTSC tuners anymore.
