Don't see why you can't delete and recreate. Have you tried? ;-)

This is quite an issue for UK users at the moment, because the channel
providers are going through a re-branding phase. In the last few months,
maybe a dozen channels have all changed their name; sometimes subtly
(fiveUS -> fiveUSA), but often less subtly (UKTV History -> Yesterday,
UKTV People -> Blighty). The only realistic way to make these changes in
myth is to update the callsign, because that is the string that is
displayed in lists of programs and recordings. It's not realistic to leave
the callsign unchanged, because you then have to mentally remember all the
mappings and apply them to what you see.

That then means you have to update the station on any matching recording
rules as well. In a busy myth system, you may well have hundreds of
recording rules defined, and going through them, deleting and recreating
as necessary is a lengthy exercise. Rinse and repeat when the next wave of
changes are announced.
