I would recommend just starting with mythbuntu.

If your main purpose for the box will be a myth box, then mythbuntu is the
way to go. It is much lighter on system ram than full ubuntu, and I have
found this a huge plus. When you boot plain old ubuntu up, Top shows it
using around 500mb of ram, but with mythbuntu, it is around 400mb of ram,
and that includes all the mythtv related stuff, like mysql, apache,
mythbackend, and mythfrontend.

Also, I don't think anyone in this thread has mentioned, but mythbuntu does
come with synaptic so you can install programs just the same way as in
regular ubuntu---via a nice gui.

Lastly, if you know which programs you're going to install, then mythbuntu
will give you a more streamlined system, as a lot of extras are installed
with regular ubuntu that you can't uninstall...like open office.
