I use this:

It converts video, puts it in its own folder (or replaces the  
original), and generates an rss feed. I subscribe to the feed and it  
auto-syncs to my iPhone/iPod when I plug them in. It does have a fair  
number of perl module dependencies so it can be a little work getting  
them installed but the script is VERY powerful. It can create multiple  
rss feeds based on programs or keywords, etc.
