I haven't actually tried it, but I suspect mysql will work just fine. 
If you're running tuner cards I'm not so sure about mythtv/ivtv/etc - 
I'm not sure if those are compatible with any virtualization schemes. 
In general the main issue with virtualization tends to be direct 
hardware access / device drivers / etc.  An app like mysql that just 
access files and communicates via IP shouldn't have any issues as long 
as you allocate sufficient RAM/CPU/etc.  There will be a little 
overhead, but nothing horrible.
