I use Handbrake. It's about as easy as it gets for a CLI ripper, and it
works great for batch processing (for ripping each title of a series disc,
like the Sopranos, etc). http://handbrake.m0k.org/ It's cross platform,
and I've successfully used the Linux, windows, and Mac versions. You can
specify in terms of quality, file size, format, for both audio and video. I
highly recommend it. Right now, the only problem I have with it is running
it in a 64 bit environment (I just switched from the x86 version of Ubuntu
when I installed 7.10 on Saturday, so I haven't had much time to fix
everything).
