Dan,

(Assuming atrpms-unstable is binary package of trunk)

When you run a later version of Mythtv it will upgrade the database to
support the new features etc that get added. If you decide that trunk
is not for you you wont be able to use the upgraded db with the older
version of myth.

When trunk is branched for "release" you should then be able to switch
to 0.21-fixes if you desire (ie If you are only interested in Storage
Groups).

That being said, I have been using Myth for nearly 3 years and have
only ever run trunk. It is important to track the mailing lists when
running trunk and I would avoid upgrading when there has been
significant commits.
eg Delay upgrading immediately following a ffmpeg sync for example.
