Assuming that where you store the video is a separate partition from
your root partition, you will need to back up your mysql database (see
main myth docs for instructions), and your .lircrc file and any other
configuration files (though if /home is on its own partition, you may
not have to worry too much about that), then install Ubuntu making
sure that it does not format your video (and possibly home)
partitions.  Install Myth and then move your mysql dump back into the
newly created database.

That is a very brief and high level set of steps, but it should get
you going in the right direction.
