Ah.. Much Much better..

OK so I ran this:
rpm -qa |grep "ivtv"
and got this:
perl-Video-ivtv-0.13-8.fc6.at
ivtv-firmware-1.8a-10.at

Which basically told me that both ivtv and ivtv-kmdl have been uninstalled.

So basically updating my system removed the previously installed? Or did
the previously installed version just not work the current kernel so they no
longer show up?

Anyway I then when to ivtvdriver.org and clicked the Fedora link. There it
had instructions on how to reinstall via yum. I did that and now see the
following when issueing a rpm -qa | grep "ivtv"
ivtv-kmdl-2.6.19-1.2895.fc6-0.9.1-123.fc6.at
perl-Video-ivtv-0.13-8.fc6.at
ivtv-0.9.1-123.fc6.at
ivtv-firmware-1.8a-10.at

So I've got the kernel stuff installed again. Then I checked the output of
lsmod |grep "ivtv" Which now has data.. Hurray!
ivtv 184400 0
i2c_algo_bit 17225 3 cx88_vp3054_i2c,cx88xx,ivtv
cx2341x 20677 2 cx88_blackbird,ivtv
tveeprom 25681 2 cx88xx,ivtv
i2c_core 34369 15

videodev 35777 4 cx88_blackbird,cx8800,cx88xx,ivtv
v4l1_compat 20421 3 cx8800,ivtv,videodev
v4l2_common 33345 8
cx88_blackbird,cx25840,tuner,cx8800,compat_ioctl32,ivtv,cx2341x,videodev

The output of ll /dev/video?
crw------- 1 mythtv root 81, 0 Jan 19 21:27 /dev/video0
crw------- 1 mythtv root 81, 1 Jan 19 21:27 /dev/video1
crw------- 1 mythtv root 81, 2 Jan 19 21:27 /dev/video2

All my video devices are back!

I still have plenty of setup work to do, but thanks everyone for pointing me
in the right direction. I never expected an update to cause what it did,
and figured that I had installed something that was in conflict to the ivtv,
but that is not the case.

Thanks!
