I'm sure I'll get flamed for this, but I prefer Gentoo.  It's not for
everybody, and it does take a long time to install since you have to
compile everything.  It's pretty customizable and it also very well
documented.

Probably not the best distro to start with on Linux, but it will force
you to learn quite a bit.
