RESOLVED

The solution was to configure mythtv as follows:

Mythfrontend -> Setup -> Setup -> General -> Audio:

Audio output device: ALSA:default
Passthrough Device:  Default
Mixer device:        default
Mixer controls:      Master
===========================================

Admittedly, this is what the HOWTO says it should be for Alsa
(Twat!).The reason that I
thought that it was not worth trying is that 95% of LiveTV, video,DVD,
music, etc worked
perfectly with /dev/dsp. All that I can imagine is that there are
differences in the way OSS
emulation was working with ffmpeg on my particular hardware.

Hopefully this thread helps some other hapless soul in the future!
