I think for two reasons:

- It's awfully hard to redefine terms once they're in common use,  
even if the redefinition is in some ways more logical.  (See the  
"cracker" vs. "hacker" debate for another example.)

- "Gibibyte" is hard to pronounce, and if you say it out loud people  
just look at you funny.
