[mythtv-users] Crop in Transcode?

You can use the -j option to do this.  The format is -j
top,left,bottom,right.  I've found for my 480x480 recordings that -j
58,4,54,0 works well.

An option if you want to export to DVD is use --export_prof dvd-ntsc in
conjunction with --export_asr 3 which is 16:9 and it'll automatically
crop the top and bottom without having to use the -j option.
