Except, if you read the original message, you'd see that Gregg is  
using a Hauppauge PVR-250, which IS an MPEG encoder.

It sounds like it's a little beyond Myth at this point, what with the  
incoming MPEG-2 stream already having an Audio track, and the need to  
resync and remux files to incorporate the AC3 track. You COULD switch  
over to a dumb framegrabber (They are pretty cheap), but you might  
(depending on the card) lose some video quality in that process.
