The short answer is by adding the right settings to xorg.conf. These
depend on the display type and your video card, etc. You can do this
by hand with a bit of googling and a lot of experimenting.

Depending on your distro, it may be much easier. On Fedora you can use
system-config-display to generate your xorg.conf with the right
settings, although if you're using nvidia it may cause xorg to revert
to the nv driver. You'll have to change this back to the nvidia
driver. Other distros have different tools for configuring display,
but as long as your card supports dual head, or if you have multiple
graphics cards, it shouldn't be too difficult.

I run Xinerama on my desktop, meaning one X session spread over two
displays -- on a Matrox G450, but I've also done it with Nvidia cards.
The only time I ever ran two separate X displays was under Mandriva,
but it was  really simple to set up using the GUI.
