Ahh, yes.  Go into any screen that shows you your recordings, like 
"watch recordings", say.  Hit the right arrow key or right direction 
button on your remote while the recording you want to transcode is 
selected.  Select the menu item "job options".
Select "begin transcoding".
You can select any of the transcoding properties you want in the 
recording profiles section of the settings.
