As another poster said: use ntp.
Also, you should have changed the time to 5 minutes *later*, not 5
minutes earlier, otherwise you'll miss even more of the beginning
of your recordings.
If the problem persists even after you've corrected the time, then
likely the shows actually start a little early. They do that
sometimes. You can schedule the recordings so that they too start
a few minutes early.
