I'm using an MSI K8NGM2-FID and am quite happy with it. Onboard SPDIF,
component out, DVI, VGA, gigabit. Good linux support. No fans on the
mobo either.

You'll definitely want more storage. 500GB can be had for under $200
nowadays. There's also not much difference in cost between the 3000+
and the 3500+. The extra 400MHz will come in handy on HD recordings.
